Ceremonial cacao

Ceremonial cacao is the cacao bean in its most whole form: unroasted, ground and pressed into a block that keeps the bean's own cacao butter. It is melted slowly in hot water and drunk in peace and quiet – alone on a still morning or together with others in a circle.

How does ceremonial cacao differ from ordinary cocoa?

Ordinary cocoa powder is roasted and defatted, and chocolate is mixed with sugar and milk. Ceremonial cacao is the whole bean, with the fat and flavour intact. It becomes thick, smooth and deep in flavour, and one cup is more filling than you might think.

How much should you use?

A regular cup is 20–25 g. A ceremonial cup is 30–40 g. Start low the first time. A 500 g block makes 12–25 cups. The full recipe is in Ceremonial cacao – step-by-step recipe (in Swedish), and the history of cacao in What is ceremonial cacao?
